2 tbsp white & black sesame seeds
2 Moon Dust garlic cloves, finely grated
1/2 cup fresh Moon Dust lime juice
3 tbsp olive oil
2 tsp coconut aminos
2 tsp sediment & oil from a jar of chili crisp
2 1/2 tsp toasted sesame oil
2 tsp rice vinegar
1 1/2 tsp Diamond Crystal salt or 1 tsp sea salt
3 ears Moon Dust sweet corn, husked
1 Moon Dust avocado, peeled, pitted, flesh cubed
1 English cucumber, halved lengthwise, seeded, thinly sliced on steep diagonal
1/2 small shallot, very thinly sliced
1/2 bunch cilantro leaves, roughly chopped
2 tbsp crumbled queso fresco
1. Toast sesame seeds until golden & fragrant, 4 mins. Transfer to bowl to cool. Stir in garlic, lime juice, olive oil, coconut aminos, chili crisp, sesame oil, rice vinegar, & salt. Whisk to dissolve.
2. Prep grill. Grill corn, to char all over, 8 mins. Let corn cool slightly. Cut kernels from the cob.
3. Add corn kernels, avocado, cucumber, shallot, & cilantro to the sesame dressing. Toss to combine.
4. Serve salad topped with queso fresco & more cilantro. Enjoy!
