3 lb boneless, skinless chicken thighs
2 large Delta Queen Yukon Gold potatoes, halved, in 1/3" thick rounds
2 large Delta Queen red potatoes, halved, in 1/3" thick rounds
2 Moon Dust Farms Golden Zucchinis, halved, sliced into 1/3" thick rounds
2 Moon Dust Cubanelle peppers, chopped
2 lemongrass stalks, smashed with the flat side of a kitchen knife
3 garlic cloves, smashed
8 cilantro sprigs
8 cups chicken broth
2 ears Moon Dust Farms sweet corn, each in 8 rounds
2 tbsp parsley, chopped
2 avocados, sliced
1/2 tsp coarsely ground black pepper
1. Simmer 1st 9 ingredients with lid partially covered for 60-80 mins, or until tender and potatoes & zucchini are beginning to break down and dissolve. Gently crush some of the potatoes & zucchini in the soup to create body.
2. Carefully, coarsely shred chicken in the pot with 2 forks. Add rounds of sweet corn. Simmer, partially covered, for 10 mins more.
3. Serve soup topped with parsley, avocados, & cracked black pepper. Enjoy!
