FARM FRESH PRODUCE

Silva Ranch Beef Guisada 

2 Moon Dust Farms yellow onions, 1 halved, 1 chopped

8 Moon Dust Farms garlic cloves, 4 smashed, 4 chopped

3-4 lb Silva Ranch boneless, stew meat

1 bay leaf 

2 tbsp Diamond Crystal (or 1 tbsp sea salt)

1 lb Moon Dust Farms red potatoes, peeled in 1” pieces 

3 tbsp Moon Dust Farms Extra Virgin Olive Oil

2 lb Moon Dust Farms Roma tomatoes, coarsely chopped 

6 oz tomatillos, coarsely chopped 

1 Moon Dust Farms red bell peppers, coarsely chopped 

1 Moon Dust Farms green bell peppers, coarsely chopped 

1 small Moon Dust Farms jalapeno pepper, seeded, finely chopped 

3 tbsp tomato paste 

½ tsp ground cumin 

1 1/2 tsp ground coriander

1 tsp ground coriander

1 tbsp dried oregano 

6 oz coarsely grated sharp cheddar

1/2 cup sour cream

1/2 cup thinly sliced radishes

1/4 cup sliced pickled jalapenos

Cilantro sprigs 

1. Add halved onion, smashed garlic, Silva Ranch stew meat, bay leaf, & 1 tbsp Diamond Crystal salt (or 1/2 tbsp sea salt) to a Dutch oven. Add water just to cover beef. Simmer, skimming foam until nearly fork tender, about 3 hrs. Transfer meat to large bowl. Strain braising liquid through fine mesh sieve into medium bowl. Reserve braising liquid. Discard solids.  
2. Cook potatoes in salted boiling water until just fork tender, 8-10 mins. Drain. 
3. Coarsely chop remaining onion and finely chop remaining 4 garlic cloves. Heat oil in Dutch oven. Add onion, garlic, tomatoes, tomatillos, bell peppers, jalapenos & 1 tbsp. Diamond Crystal salt (or 1/2 tbsp sea salt). Sauté to soften, 18-22 mins. Add tomato paste, cumin, coriander, & oregano. Lightly salt.  Cook, 4 mins.
4. Add beef, potatoes & 3 cups reserved braising liquid to pot. Cook until meat falls apart easily, 60-75 minutes. Adjust seasoning to taste.
5. Serve topped with grated cheddar, sour cream, radishes, pickled jalapeno, & cilantro.
