4 oz feta, crumbled
1/2 cup whole milk Greek yogurt
zest of 1 lemon
1 tbsp lemon juice
1 tbsp Moon Dust Farms Extra Virgin Olive Oil +more to finish
1 tbsp torn mint leaves +sprigs for garnish
1/2 tsp Diamond Crystal salt or 1/4 tsp fine sea salt
1 ½ lb mixed Moon Dust Farms tomatoes, sliced, quartered, or halved
Flaky sea salt
1/2 tsp coarsely ground black pepper
1. Mash feta with a fork. Add yogurt, zest, juice, 1 tbsp olive oil, & 1 tbsp mint. Whip by hand or with an electric beater to lighten. Season to taste.
2. Spread feta mixture over large shallow bowl or serving platter. Scatter tomatoes atop. Drizzle with olive oil. Top with flaky sea salt, freshly cracked black pepper, & more mint leaves. Enjoy!
